Scottish Spring Caesar

With this Caesar, capture the essence of spring’s first warm days on the Scottish island of Islay. Built upon a big, smoky Scotch, coupled with pickled elements to represent the last of the winter’s jarred goodies from the previous summer.

Spice Level


Fresh cracked salt and black pepper


  • 6 dashes Worcestershire sauce
  • 3 dashes cayenne hot sauce
  • 3 grinds fresh cracked salt and black pepper
  • ½ oz (15 mL) pickle brine (from any jar of pickled vegetables)
  • 1 oz (30 mL) Scotch
  • 3 oz (90 mL) Mott’s Clamato Cocktail


Celery stick
Pickled green tomato slice


1. Rim a highball glass with citrus and rimmer.
2. Fill the glass to the top with ice.
3. Add the ingredients in the order listed.
4. Stir well to mix the cocktail, and garnish.
